Easy Salmon Carbonara

A super easy and delicious salmon carbonara that’s quick to rustle up but sure to impress your flatmates! Full of flavour and minimal clearing up afterwards; we count that as a win.

Serves: 4

Cooking time: 20 minutes

  • 400g tagliatelle pasta
  • 2 packs of salmon trimmings
  • 150g of crème fraiche
  • 2 cloves of garlic
  • Juice of 1 lemon
  • 1 courgette
  • 2 egg yolk
  • 1 red onion
  • 1 tbsp olive oil
  • Salt and pepper to taste

  1. First of all chop the red onion and courgette and fry gently in the oil over a medium heat for 5 mins. Then mince the garlic and add this to the pan, cook for 30 secs and turn the heat to low.
  2. Next, put the tagliatelle on to boil. While the pasta cooks mix the creme fraiche, egg yolks and lemon juice together in a bowl, adding some salt and pepper to taste.
  3. A couple of minutes before the pasta is done add the salmon and the crème fraiche mixture to the frying pan with the veggies and stir. Cook until the salmon turns to a pale pink (2-3 minutes is plenty).
  4. Drain the pasta as soon as it’s cooked and mix everything together in the pan so that it is well coated with the sauce. Serve straight away with broccoli or the vegetable of your choice.
